Due to the marly limestone soil, this wine has the inimitable qualities of freshness and lightness. A limpid colour with scents of almonds and flint developping notes of fruits and flowers. Due to its acidity it has a rich and a fresh taste. An elegant wine with a lasting aroma. | |
| Goes well with seafood, hot oyster in sabayon sauce of the same wine, young rabbit in jelly, sheep's and goat's milk cheese. | ||

The softness and subtlety of this wine is bought on by the
freshness of the acidity and this all makes for an elegant and full-bodied wine. It should be drunk within about 3 years, but could be aged for 5 to 10 years. This will bring out the richness of the bouquet and the wine will gain in complexity. |
